Fish and Shellfish Over The Coals
Fish and Shellfish Over The Coals, printed in 1975 by the National Fishery Education Center in Chicago, Illinois, and the U.S. Dept. of Commerce. So we can be assured there is no propaganda here!
I hadn’t been finding many fish & seafood related cookbooks, but Gerty came through (as always) with this fun cookbook from her shop.
Despite being a government publication, this is actually a rather nice little cookbook. It is filled with many nice looking recipes, great photography, and fun spot illustrations. It offers recipes on a wide range of fresh water and salt water fish, as well as oysters, lobster, crab, scallops and more.
You will also find information on buying fresh or frozen fish, along with the different cuts that are usually available. There are tips on how much to buy, per person, and “how to know good fish” so you can tell what is fresh when you are shopping.
Since this cookbook focuses on grilling, they also offer tips on how start the grill, and give tips on using wood chips to give the fish a pleasant smoky flavor.
While many of these vintage cookbook in my collection are usually not something I’d seriously use for recipes in my own cooking, this one is. There are definitely some tasty looking recipes in here, and that just makes this cookbook an even cooler addition to my collection!
Check back tomorrow for a fun & exciting recipe from this cookbook. That’s right, fun and exciting!
