String Beans Italian Style – Fagiolini All'Italian – Recipe

2 pounds fresh string beans
1/2 cup dry salt fat back or salt pork, diced fine
1/2 pound ripe Italian egg tomatoes, peeled and diced
1 cup beef or chicken broth
1/3 cup parsley, minced
salt and pepper

Place strong beans and fat back or salt pork in large, low saucepan or skillet, with tomatoes, salt, pepper and broth. Cover and simmer for one hour and 20 minutes. If necessary, cook uncovered 5 minutes or until excessive moisture has eveaporated. Sprinkle with parsley. Serves 6.
